The words GI stand for Glycemic Index, which means the measurement of carbohydrates and how they affect the sugar levels in the blood. It also tells you how fast that certain foods convert to sugar in the body. Years ago we thought that eating table sugar gave you diabetes, although this is partly true over time, we have discovered that eating starchy foods like potatoes and rice  are the main reasons we have such an epidemic of type II diabetes.

Fast foods are loaded with carbohydrates that are not good for you. However, not all carbohydrates process in the same way. Limiting saturated fats, hydrogenated oils, which are Trans fats and adding enough fiber is the way to have a GI Diet.

Switching to a Low GI Diet is not a difficult task and there is no need for counting anything, a few substitutions is all that is needed to be on your way to good health. By using the following foods, you are switching high GI for low GI carbs. Here is simple list of great low GI Diet Food: noodles, pasta, basmati rice, salad vegetables with vinaigrette style dressings, bran, oat and barley cereals, sour dough, stone ground and wholegrain breads. These are simple changes, and not drastic at all, you should limit the amount of potatoes you eat as well. 

Scientists have done research and have charted approximately 750 foods with a lower GI one of the examples is pearl barley, they have discovered that the pearling of barley actually lessens the amount of fiber, so they recommend eating barley that has been hulled.
